Sparkling wines
A specialty is the artisanal production of the wine grower’s sparkling wine whose complete production is carried out by the family itself where exclusively ecologically cultivated grapes of the estate are used.
For the base wine, suitable and aromatic grapes are selected in the late summer, in autumn they are harvested manually. Then, they are spontaneously fermented and gently turned into wine.
Over the winter, the wine matures and is then fermented in bottles following the classical method.
Afterwards, the sparkling wine matures for at least nine months containing the yeast before it is placed on traditional riddle racks: Each bottle is shaken per hand daily until the yeast is deposited in the bottle-neck. Finally, the sparkling wine is disgorged.
